Watermelon and Feta Salad with Balsamic Reduction

This cooling, colourful and refreshing Watermelon and Feta Salad with Balsamic Reduction is the perfect light alternative to a hot, hearty meal during a warm summers day!
  • • 1 small sweet watermelon, cut in triangular wedges
  • • 1 lime, juiced and zested
  • • 3 ½ ounces (100g) feta cheese
  • • black pepper to taste
  • • ¼ cup mint leaves
  • • ¼ cup balsamic vinegar
  • • 1 table spoon brown sugar or honey
  1. MAKE the balsamic reduction by adding the balsamic vinegar and sugar (or honey) to a small sauce pot over a medium/high heat. Bring to a simmer and then reduce the heat to maintain a low simmer for about 7-10 minutes. The balsamic vinegar should reduce by about 60%.
  2. WATCH carefully near the end as you dot want it to burn. When the reduction coats the back of a spoon it will be thick enough. Remove of the heat and allow to cool. It will thicken further as it cools.
  3. TO SERVE, pour the lime juice over the water melon wedges, sprinkle with the crumbled feta cheese, lime zest, a touch of black pepper and finally drizzle over the balsamic reduction.
