Asian Pan Fried Salmon with Tomato Salad and Rice

Ingredients
  • Pan Fried Salmon:
  • • 4 (520g) salmon fillets, skin on
  • • ½ tea spoon turmeric
  • • ½ tea spoon chilli powder
  • • ½ tea spoon salt
  • • 2 table spoons cilantro, finely chopped
  • • 2 table spoons (30ml) sunflower oil
  • Sautéed Onions:
  • • 4 table spoons (60ml) sunflower oil
  • • 2 large onions, finely sliced
  • • 2 garlic cloves, minced
  • • ½ tea spoon turmeric
  • • ½ tea spoon ground coriander
  • • ½ tea spoon chilli powder
  • • ½ tea spoon salt
  • Red Onion and Tomato Salad:
  • • 2 (160g) medium tomatoes, chopped
  • • ½ (60g) red onion, finely chopped
  • • 2 tablespoons fresh cilantro (coriander), chopped
  • • pinch of salt
  • Other Ingredients:
  • • 1½ cup basmati rice
  • • ½ lime, cut into 4 wedges
Instructions
  1. COOK the rice according to the packet instructions.
  2. SAUTEED ONIONS: SAUTEE the onions, garlic and salt in the oil for 5 minutes over a low/medium heat.
  3. ADD ¼ cup water, stir and cook for a further 5 minutes.
  4. ADD the turmeric, ground coriander and chilli powder to the onions and cook for a further 10 minutes. Stir midway through (Add another ¼ cup water if the pan gets too dry and the onions start to burn).
  5. PAN FRIED SALMON: MEANWHILE, mix the turmeric, chilli powder, salt, cilantro and oil into a paste. RUB the paste evenly over all four salmon fillets. FRY the salmon over a medium heat on a non-stick frying pan for 3 minutes skin side down and a further 2 minutes each on every other side.
  6. RED ONION AND TOMATO SALAD: TOSS the tomatoes, onions, cilantro and salt together in a bowl.
  7. SERVE the salmon on a bed of warm rice and sautéed onions. Top the salmon fillet with the tomato salad and a wedge of lime.
