Rainbow Detox Salad

RAINBOW DETOX SALAD. A light, healthy, glowing salad with the most deliciously sweet and citrusy dressing.
  • SALAD:
  • 1 ear (240g) fresh sweetcorn, husked
  • ⅓ cup (65g) couscous
  • ⅔ cup parsley, no stalks and finely chopped
  • 1 (100g) avocado, diced
  • 3 table spoons red onion, finely chopped
  • 15 (160g) cherry tomatoes, halved
  • 10 fresh mint leaves, finely chopped
  • 3 ½ table spoons extra virgin olive oil
  • 2 table spoons fresh lime juice
  • 1 table spoon honey
  • ½ table spoon dijon mustard
  • ¼ tea spoon salt
  • ½ tea spoon black pepper
  1. HEAT the grill to a medium/high heat and grill/broil your sweet corn for 15-20 minutes, turning every 5 minutes.
  2. COOK the couscous according to the packet instructions.
  3. MEANWHILE, for the dressing - combine the extra virgin olive oil, fresh lime juice, honey, dijon mustard, salt and pepper.
  4. CUT the corn off the cob and toss with the couscous, parsley, avocado, red onion, cherry tomatoes and fresh mint in a large bowl.
  5. POUR the dressing over the salad, toss and serve.
